Andrew has had a tough week at school this week. He had two major tests that he made B’s in but he was disappointed he didn’t get A’s. He spent hours studying, he was stressed, he was overwhelmed, and I wanted to cheer him up somehow. While he was in class, I was home looking up recipes on Pinterest, trying to find a dessert that wasn’t too bad for his diet. I was hopeful that I could make him something sweet and take it to him when I picked him up from class.
I found one that didn’t have eggs, milk, or butter and it looked super simple. It is Blueberry Angel Food Cake. When you read the recipe below you will not believe how simple it is. And Andrew said it was delicious! He thinks it would be a good food for breakfast with a cup of coffee.
Blueberry Angel Food Cake
You will need 1 greased casserole dish, 1 box of Angel Food Cake mix (I used Duncan Hines), 1 can of blueberries, a mixing bowl and spoon.
Pour the blueberries and the Angel Food Cake mix into the bowl.
Mix the ingredients. The mixture will be very airy and fluffy.
Pour the mixture into the greased dish.
Bake at 350 degrees for 30 minutes.
The cake will rise a good bit while it is cooking, but it will fall as it cools. Let it sit for about 15 minutes before cutting and serving.
